African Sweet Potato Stew – Pressure Cooker

Ingredients
Instructions
  1. Set PC to brown and add onions cooking until translucent
  2. Mix in cabbage and garlic and cook an additional 5 minutes
  3. Stir in sweet potatoes, tomatoes, apple juice, ginger and red pepper flakes
  4. Turn PC to high and set for 20 minutes
  5. Allow PC to come to natural pressure
  6. Remove lid and add green beans and set to brown until heated thoroughly
  7. Turn off PC and stir in peanut butter, mixing until thoroughly incorporated. Serve stew over brown rice with side salad and crusty whole grain bread.
Stove Top
  1. In a large pot sauté onions over medium heat until translucent
  2. Mix in cabbage and garlic and cook for an additional 5 minutes
  3. Add sweet potatoes, tomatoes, apple juice, ginger and red pepper flakes
  4. Bring to boil and reduce heat to simmer
  5. Cook for 30 minutes or until potatoes are tender
  6. Once potatoes are tender add green beans and cook for an additional 5 minutes until bean are warmed
  7. Stir in peanut butter and mix until thoroughly incorporated
