A simple, quick meal that is filled with taste and antioxidants. Fighting cancer while you are eating – how can you go wrong? I use soba noodles here (Hakubaku Organic Soba) which are thin pasta noodles made from buckwheat. You can buy them in the Asian section in your grocery store. They usually come in a flat, clear plastic package and are wrapped up in 3 cute bundles per package. Just remember to remove the ties around each bundle before you throw them into the pot (I admit it – I left them on once :)). You can also substitute any pasta or gluten-free pasta if you want this gluten-free. If you do use another pasta it is best to use an angel hair or capellini for this recipe.
