These enchiladas look like a lot of work but they are very deceiving. Using frozen veggies, canned beans and jarred salsa will save you tons of time and fill hungry tummies faster. You can make these ahead of time, make some extra and pop some in the freezer for a later day. You will never tire of them. Ole, ole!
