  1. Preheat oven to 350°F
  2. Saute onion and pepper mixture until softened
  3. Add spices and toss thoroughly
  4. Add zucchini and cook for an additional 3-4 minutes
  5. Add corn, rice and beans, mix and heat through
  6. Add salsa and mix well
  7. Line a glass baking dish with a few spoonfuls of enchilada sauce to coat bottom of dish
  8. Steam heat tortillas, 4 at a time, in microwave
  9. Add 2 spoonfuls of veggie and rice mixture down center of each tortilla, gently rolling and placing seam side down in glass baking dish. Repeat until all tortillas are used.
  10. If extra veggie mixture, spread out over rolled enchiladas in dish
  11. Cover enchiladas with enchilada sauce ensuring complete coverage
  12. Place dish in preheated oven and bake uncovered for 20 minutes
  13. Serve with cilantro and avocado
