My father did not care for Brussel sprouts so, as a result, my mom never served them. That’s just how they rolled. Frankly, I didn’t even know what they looked like and therefore had never tasted them until I came upon this recipe in Color Me Vegan. I modified the recipe slightly by omitting the oil and increasing the pecans and apples but it is still simply yummy. These shredded little cabbages mix together so nicely with the apples and toasted pecans, all coated with a bit of pure maple syrup.
