Carrot Falafel
  1. Preheat oven to 350°F. Line a baking sheet with parchment paper.
  2. Place carrots and garlic in food processor and pulse until well chopped
  3. Add chickpeas, flour, lemon juice and cumin and process until a grainy paste is formed. The mixture should stick together. Don’t over process.
  4. Form small patties from the mixture – about 1/4 cup each. Flatten lightly and place on parchment lined baking sheet.
  5. Place baking sheet in preheated oven and bake on one side for 10 minutes. Flip gently and bake for an additional 15-20 minutes until crisp on the outside but soft on the inside.
  6. Place cooked falafel onto a heated corn tortilla, stuffed into a whole wheat pita or crumbled in a salad. Add tzatziki slaw mixture, top with red onions, tomatoes and olives if desired.
Tzatziki Slaw
  1. Add prepared tzatziki sauce to 2 cups of cabbage slaw and mix well.
