Cashew Sour Cream
This yummy sour cream is a dream on top of enchiladas, nachos, potatoes, mixed in salads, and the list goes on. Whip some up and enjoy!

Instructions
  1. Soak cashews in water for an hour or overnight. If you have a Vitamix there is no need to soak cashews.
  2. Drain the cashews and place in blender along with the water, apple cider vinegar, lemon juice and salt (optional) until a smooth consistency is reached
  3. Add more water or less water depending on how thin or thick you want the cream
  4. Keep in covered container in refrigerator for up to one week
