  1. To a medium saucepan add 4 cups water, turmeric and rinsed lentils
  2. Bring to boil then reduce heat to simmer, cover and cook for 30 minutes until lentils are tender
  3. Heat a large pot over medium heat, add panch phoron and 1 quick spray of cooking oil right on top of the seeds. This is the only time in all my cooking do I ever use any kind of oil. The oil helps to bring the seeds to high heat and releases their flavors. You can try without the oil too.
  4. Continue heating until the first seed pops. Immediately add the onion, garlic, red pepper flakes and ginger.
  5. Cook until onion softens and then add the tomatoes, cauliflower and 1/2 cup water, stir thoroughly
  6. Cover and cook until cauliflower is tender
  7. When lentils and cauliflower are both tender, add the lentils to the cauliflower mixture and incorporate and heat thoroughly
  8. Serve over brown basmati rice with a side of greens, corn and whole grain bread or naan (see recipe below)
