Mix flaxseed and water and set aside for 10 minutes to allow to thicken
In a medium pan, sauté onion and garlic until softened. Transfer to large mixing bowl.
Process oatmeal into flour and transfer to mixing bowl
Using same processor, process bread slices into bread crumbs and add to bowl mixture
Next, finely grate carrots either by hand or using the grate blade on food processor and add to bowl mixture
Toast sunflower seeds in toaster oven or regular oven for 2 1/2 minutes or less. Watch carefully. Add to mixing bowl.
Drain and rinse beans and add to food processor. Pulse several times to roughly puree. Transfer mixture to bowl.
Finely chop cilantro and add to bowl
Thoroughly mix all contents of mixing bowl until all ingredients are incorporated. Add seasonings and mix again.
Lightly wet hands and form mixture into 6 large burgers or 8 medium to small burgers
Place burgers on parchment paper-lined baking sheet and place in oven. Bake for 12 minutes on one side and 15-17 minutes on second side or until cooked to desired preference.
Dress up burgers with condiments and veggies and serve on whole grain bread. Burgers can also be crumbled up into a salad and topped with plant-based ranch dressing or cheesy no-cheese queso sauce (see recipe link above) or wrapped up into a whole wheat tortilla. Mix it up!
