Preheat oven to 375°F. Line a 9×9 square pan with parchment paper.
Mix together the flax seed and warm water, set aside.
Whisk cornmeal, baking powder and optional salt in a large bowl.
In a separate bowl, mix soy milk, applesauce, maple syrup and flax together and then add mixture to the large bowl, mix thoroughly.
Pour the batter into the prepared pan and bake for 20-25 minutes. The batter will be very runny but that is okay. Test with cake tester until comes out clean after inserting into center and edges are firm. Yum!
