  1. Mix the dry ingredients in a medium bowl until incorporated leaving a well in middle
  2. In another bowl whisk together the wet ingredients and pour into the dry ingredient well. Mix thoroughly.
  3. Let sit for 10 minutes until batter is thickened. It does thicken – I promise!
  4. Measure out 1/4 cup batter and add to a heated, non stick skillet
  5. Flip over once bubbles appear on the surface and you can easily put your spatula underneath
  6. Repeat until all batter is used up
  7. Serve with pure maple syrup, fresh jam or fruit, or you can gobble them up just the way they are!
  8. Heat up the next day for about 10-20 seconds in the microwave

Note:  I frequently travel with these pancakes.  I lay one pancake out and spread a tablespoon of natural jam (flavor of choice).  I place another pancake on top of this and then cut like a sandwich.  Place in ziploc bag and enjoy on the plane or car!  I know crazy right?
