Oh the wonders of the tiny chia seed. Packed with omega-3s, helpful in weight reduction, and in the control of blood pressure and diabetes – it seems like this little seed can do no wrong. Then add the free radical scavengers pumpkin and pomegranate seeds and you have a breakfast of champions!
For some reason I always seem to serve this dish during the holidays when we have guests for breakfast. It is such a festive little dish and so delicious too. However, I am going to make it a goal to try and make this recipe all year round because I love it so much.
