  1. Toast pumpkin seeds in a small skillet on medium heat until they begin to pop – set aside
  2. In a blender mix together water, cashews, honey, apple cider vinegar and vanilla until smooth
  3. Place chia seeds in a medium glass bowl and add in cashew cream mixture – blend thoroughly
  4. Allow chia mixture to thicken in refrigerator for at least 10-15 minutes
  5. Spoon pudding into glass cups or bowls and top with toasted pumpkin seeds and pomegranate seeds
