With the recent arrival of several unexpected, but welcomed, guests I needed something healthy and not too weird (believe it or not vegan is considered weird by some) to serve for a late dinner. I am sharing a delicious soup I found in the 2017 issue of Forks Over Knives magazine. I had received a copy for Christmas and it was not a minute too soon. This lentil potato soup is so hearty and filling. My guests loved it and so will yours. I modified it just a bit by adding more veggies because that is the way I roll, cumin because I can’t help myself, and I cooked mine in the Pressure Cooker. Add some crusty, whole wheat bread and slurp away!
