Instructions
  1. Place rinsed and drained lentils into pressure cooker add water to cover and set on High Pressure for 20 minutes
  2. Once cooked, drain lentils and place back into pressure cooker
  3. Add the potatoes, tomatoes, carrots, onion, cumin and vegetable broth to the lentils
  4. Set pressure cooker on High Pressure for 30 minutes
  5. Release pressure and remove top and add in chopped spinach. Mix in and replace top (without turning on) for a few more minutes until wilted. Add seasoning if desired.
  6. If using the stove top: to a large stock pot add the lentils, potatoes, tomatoes, carrots, onion, cumin and veggie broth
  7. Bring all to a boil, reduce heat and simmer for 2 hours until lentils and veggies are tender.
  8. Turn off heat, mix in spinach and let sit until wilted. Season if desired.
