There is no cooking involved in this recipe. It is all raw baby! I love this recipe when I want to re-energize my metabolism. Raw foods have a way of making me feel good. I do love my cooked foods as well but this meal is great when you want to make a little change and reset. I prepped the veggies and sauce over the weekend and had lunch ready for the week. Just pack it up and go!

Collard greens, a relative of broccoli, cabbage, cauliflower and Brussel sprouts, are full of wonderful vitamins and nutrients. Each leaf contains 1 gram of protein plus B1, B6, iron, Vitamin E, manganese, omega 3s, potassium, phosphorus, folate and niacin. Look for healthy, whole, intact green organic leaves in your grocery store or farmer’s market.
What is amazing about eating raw are the sauces and dressings you can make by just using veggies, fruits, nuts and seeds. Creamy and delicious.
This recipe uses collard greens as the wrap but if you did not want to go all raw you could easily put this all on a tortilla and it would be fantastic.
