Rainbow Veggie Sauce
  1. Place all Rainbow Veggie Sauce ingredients into a blender and blend until smooth. Set aside.
  2. Prep all of the veggies for the wrap
  3. Prepare each collard green leaf and lay each one on a flat surface
  4. Spread sauce to cover the inner circle, leaving a 1/2 margin. Be sure not to put it on too thick or it will leave the burrito too wet.
  5. Now divide each ingredient between the 4 leaves, and place on on top of the sauce, layering as you go.
  6. Now fold and tuck in each end and roll in the sides, securing with a toothpick
  7. Cut each burrito in half, remove toothpicks, turn over with seam side down and serve
