One of the hardest foods to overcome during my transition to plant-based was my father’s Thanksgiving stuffing. Filled with animal products and fat it immediately made the “do not eat” list. It was a tremendous loss to me as it was so tied to all of my past holiday memories. I had to fill the void and so I adapted my father’s recipe to a healthier version. I have now had many holidays with this stuffing recipe and have new memories. I look back on past holidays with my dad and even though those are tied to visions of him in the kitchen Thanksgiving morning preparing his “secret” stuffing recipe it is all okay.
