I think spaghetti squash is a little bit of magic. It looks like just a typical squash when you slice it open. But then the magic happens after baking. Running your fork through it and voila! Spaghetti strands of goodness! Top it with a thick, veggie-filled marinara sauce and shredded vegan mozzarella. That’s what I am talking about – MAGIC!
