Back in my non-vegan oblivious days I would consume gyros whenever I had an opportunity not realizing what I was really eating. I have to admit I missed the luxurious combination of tastes. This recipe brings it all home without the guilt and health effects. It is a winner in my house and in my book. It takes some time to prepare but I promise you it is SO WORTH IT! Don’t leave out the lemon dill roasted potatoes. Fresh dill is the thing. They really round out the delicious meal.
NOTE: Plan ahead and marinate the tempeh the night before or first thing in the morning. Also, zest the lemon first and set zest aside. Cut lemon in half and use each half when indicated below.
