Back in my non-vegan oblivious days I would consume gyros whenever I had an opportunity not realizing what I was really eating. I have to admit I missed the luxurious combination of tastes. This recipe brings it all home without the guilt and health effects. It is a winner in my house and in my book. It takes some time to prepare but I promise you it is SO WORTH IT! Don’t leave out the lemon dill roasted potatoes. They really round out the delicious meal.
NOTE: Plan ahead and marinate the tempeh the night before.
