Crunchy or soft? Which one do you love the best? I must confess that I do love soft tacos – and maybe that is because I am such a disaster when it comes to eating crunchy tacos. Most of my filling comes out (usually in my lap) and I feel like I am missing out. I seem to have much more success eating soft tacos. I love the way all of the yummy ingredients blend together, wrapped up in a nice little corn tortilla blanket, that creates a flavor bomb in my mouth.
This recipe is an easy way to make a whole bunch of tacos in one fell swoop. You can serve a crowd or you can keep it all to yourself. If you would prefer, you can use store-bought non-dairy cheese instead of the Nacho Cheesy Sauce. Jarred or canned enchilada sauce can be substituted for the 1-2-3 Enchilada Sauce recipe used here. Top off your dish by adding vegan sour cream and/or avocado when serving. Ole Ole!
