When I first began my plant-based journey this recipe literally saved Thanksgiving for me. Moving away from animal products, I had to leave behind many of my traditions. I thank Susan Voisin of Fat Free Vegan for this delicious veggie loaf (with a few modifications). It is really so much more than that. Filled with savory spices and seasonings, sweet potato and tasty veggies it really fills the holiday niche. So, roll up your sleeves and get cooking. You will celebrate once it is on your plate.
