Vegan Carrot Dogs
Your senses will be fooled by these “hot dogs”. They are hot and they are a kind of dog – a carrot dog to be exact. Yes, you heard correctly. Carrots marinated in a smoky marinade and then grilled. You dress these babies up in a whole grain bun with all of the plant-based fixings. You will fit right in at any backyard BBQ.

  1. Clean and trim carrots and cook in boiling water until fork tender – do not overcook. Run under cold water to stop cooking process.
  2. Prepare marinade mixing together Bragg’s or soy sauce, water, vinegars, liquid smoke, garlic, ginger, pepper, and onion granules
  3. Place marinade in ziplock bag along with the boiled carrots, seal and store in refrigerator overnight. Turn bag occasionally to ensure carrots are completely covered in marinade.
  4. After marinating, remove carrots from bag and place in skillet the size to accommodate the number of carrots
  5. Add about 1/2 to 1 cup of marinade to skillet and cook over medium heat until carrots are browned on all sides
  6. Place each carrot on a whole grain bun (may toast) and dress with preferred toppings
