I am always on the look out for an oatmeal raisin cookie recipe that will wow my hubby. Here it is! I actually got a “wow” out of him this time. That is a winner recipe for me. This is simple and quick. Ingredients are pretty common but there are substitutes. You can sub out the flour for spelt, whole wheat, or amaranth. You can omit the raisins and add dried cranberries (or use both). The original recipe called for cashew butter but I like the taste of the peanut butter in these cookies. You can also use almond butter as well. Stay close to the prescribed measures of each ingredient or you may lose some of the integrity of the cookie.
