For me there is nothing as comforting as a big bowl of pasta with “meat” balls. Served with a side salad and crusty garlic bread – you can’t go wrong. There are so many versions of whole grain pastas available so that even if you have a gluten sensitivity you can still enjoy this delicious meal.
I have experimented with lots of different kinds of pasta and I keep coming back to rice pasta. It seems to cook to the right consistency and does not get all mushy on me. These “meat” balls are very good – especially if ,after you bake them, you heat them up in your sauce. They pick up the flavors of the sauce while at the same time lending their flavor to the sauce. It is a match made in heaven! You can use either jarred sauce (watch your ingredients) or my Manga! Marinara sauce recipe.
