Instructions
  1. Cook onions on medium heat in a Dutch Oven until begin to brown
  2. Add Vindaloo Indian Curry Powder, mix and toast slightly until fragrant – less than 1 minute
  3. Add tomato paste plus 1 cup water mix thoroughly and cook for 2 minutes until heated
  4. Mix in diced tomatoes, cauliflower, red pepper, sweet potatoes, kidney beans, vinegar, and 1 cup of water
  5. Cover and simmer for about 30 minutes. Test potatoes for doneness. If you want it thicker remove lid during the last 10 minutes of cooking.
  6. Serve over brown rice and with a side of vegan flatbread
